You can have a Thanksgiving meal with a pumpkin cake. We wouldn’t mind! But holiday baking preparations can be super stressful–especially if this is your first time hosting.

The most innovative way to start is by baking a few dishes or casseroles ahead of Thanksgiving. This includes a classic pumpkin pie.

Purists might point out that pumpkin pie wasn’t served at the First Thanksgiving. It’s become a tradition of Thanksgiving, inspiring many other desserts like pumpkin bars and pumpkin bread.

There are always Thanksgiving leftovers, as happens every year. Even if you think you’ll want to avoid looking at pumpkin pie for the next few weeks, that doesn’t mean it’s time to throw it out! It’s easy to preserve pumpkin pie by freezing it and keeping it pristine for another day.

Can you freeze pumpkin pie after it has been baked?

A pumpkin pie can be frozen before or after it has been baked. However, we recommend that a baked pie cool down to room temperature before freezing. This is because the pie should freeze as quickly and efficiently as possible. The pie will be more flavorful after it has been defrosted if the freeze time is shorter. You can bake a frozen unbaked pie straight from the freezer, provided you don’t use a porcelain or glass pie plate (more details below). However, the cooking time may be slightly longer.

Is pie crust affected by freezing?

Not at all. The traditional pie crust is made with a lot of fat and freezes well. It doesn’t matter if you just finished Thanksgiving dinner or are preparing a pie ahead of time; it is easy to freeze it.

An aluminum pie plate and lots of plastic wrap are essential things you should have. It will reduce freeze time since it is thinner and won’t crack.

Be sure to allow the pie to cool completely before you clear space in your freezer. Cover the pie with several layers of plastic wrap. The tighter seal will prevent moisture and air from affecting the consistency and texture of the pie during its time in the freezer. You can add aluminum foil to the top for an extra protective barrier.

Can pumpkin pie filling be frozen?

Yes! Yes! You can transfer any leftover filling to freezer-safe zip-top bags and freeze it for up to 5 days. Once it’s ready to use, thaw it in your refrigerator for a few hours. To speed up the thawing process, place each bag in a bowl of lukewarm or tub of water.

Frozen pumpkin pies should be consumed within four weeks. This is why it’s important to celebrate the holidays as soon as possible!

How to defrost pumpkin pie?

Transfer the pie from the freezer to the fridge 12 hours before serving it. No matter what you do, it is best to keep the pie in the refrigerator instead of on the counter. This can cause the filling to “weep” or to form more moisture, leading to a soggy crust. A soggy crust is not what anyone wants.

After it has thawed completely, remove it from the fridge and let it sit for a while before transferring it to ice cream or another container. It can be heated in a 200-degree oven for 10 minutes. Sprinkle with whipped cream to make it delicious, and cover any wrinkles the wrap might have left.
